Because Cupcakes are Always a Good Idea

Instructions

Preheat the oven to 350 degrees F.

Sift cake flour into a bowl. Add baking powder and whisk mix together. Set aside.

In the bowl of an electric stand mixer fitted with the paddle attachment, whip together butter and sugar until fluffy. In a separate bowl whisk together milk, egg whites and vanilla.

Add 1/3 of the flour mixture to the butter mixture and mix until combined. Then add 1/2 of the milk mixture and mix until fluffy.

Add another 1/3 of the flour mixture and mix until combined. Then add remaining 1/2 of the milk mixture and mix.

Add last 1/3 of the flour mixture and mix until well combined. Separate batter into 3 bowls, add pink food coloring to one and coco powder to another. Mix the bowls until smooth.

Line cupcake tins with papers. Add a layer of chocolate, pink and vanilla batter to each.

Bake about 17 to 20 minutes. Remove from pan and cool on wire rack before adding frosting.

For icing, mix butter, sugar and cream in a bowl until smooth.

Separate into 3 bowls, add pink food coloring to and coco powder to another. Mix the bowls until smooth.

Put each color into a piping bag and apply to the cupcakes in layers.

  • 1 1/2 Cups cake flour
  • 1 1/2 Tsp. baking powder
  • 7 Tbsp. butter, unsalted and softened
  • 3/4 Cup granulated sugar
  • 3 Egg whites
  • 1/2 Cup milk
  • 1/2 Tsp. vanilla
  • 1/4 Cup coco powder
  • 3 Drops pink food coloring
  • NEAPOLITAN FROSTING
  • 1 1/2 Cups butter, unsalted and softened
  • 5 Cups icing (powdered) sugar
  • 3 Tbsp. heavy cream
  • 2 Drops of pink food coloring
  • 1 Tbsp. coco powder

I am a huge fan of cupcakes! I worked at a cupcake shop all throughout high school, so I am pretty good at icing them now. I have combined my two favorite things into one with this recipe post. These are cupcakes that are inspired by ice cream. What can be better than that!?!

These neapolitan cupcakes are perfect for a special celebration and if you want you can even change up the colors to match your party decor. Plus, don’t forget to add some sprinkles. No cupcake is complete without them.

Piping the icing isn’t as hard as it looks. Just expect your first few cupcakes to be the the ones that you practice on. After that, you should have the hang of it.
