3 Recipes for Cranberry Pistachio Holiday Treats

Traditional red and green holiday colors are the focus of today’s sweet holiday treats. In fact, all three recipes are all filled with tasty cranberries and pistachios. This flavor combination is a holiday favorite.

Pro tip: make sure you buy extra pistachios… Because if you are like me, you might eat quite a while shelling them and cooking!

Cranberry Pistachio Fudge 

Everyone loves fudge! It is a perfect sweet treat to accompany your hot chocolate while sitting by the fire. Keep the squares bite-size and cut them small because these are very rich.

Ingredients

  • 1 Can sweetened condensed milk
  • 4 Cups white chocolate chips
  • 1 Cup cranberries, dried
  • 3/4 Cup pistachios, shelled natural unsalted

Directions

First, line a square baking dish with parchment paper and set aside. Then, combine the sweetened condensed milk and white chocolate chips in a saucepan over medium heat. Stirring constantly, cook until the chocolate has melted. Remove from the heat and stir in the cranberries and pistachios to combine.

Next, pour into the baking dish, cover and put in the fridge for 4 hours. Once set, cut into squares.

Cranberry Pistachio Biscotti

These double baked cookies are the perfect addition to your coffee or tea break. They are crunchy and dip well. The chocolate drizzle is optional, but definitely is good if you try it.

Ingredients

  • 2 1/4 Cups all-purpose flour
  • 1 1/2 Tsp. baking powder
  • 6 Tbsp. unsalted butter, softened
  • 3/4 Cup granulated sugar
  • 2 Eggs
  • 1 Tbsp. lemon peel, grated
  • 1 Cup cranberries, dried
  • 3/4 Cup pistachios, shelled natural unsalted

Topping

  • 2 Cups white chocolate chips, melted for drizzling

Directions

First, preheat oven to 325 degrees F. Line baking sheets with parchment paper and set aside.

Then, sift flour and baking powder into a bowl. Using a mixer, beat butter and sugar until fluffy. Beat in the eggs 1 at a time, mix in the lemon peel, and then mix in the flour mixture. Next, stir in cranberries and pistachios.

Then, turn dough out onto a floured surface. Divide dough in half and roll each half into a log. Place logs on the baking sheet and back for about 25 minutes. Cool logs on baking sheet 10 minutes, keeping the oven on.

Next, cut logs crosswise into half inch slices. Place slices, one cut side down, on prepared sheets. Bake about 9 minutes per side.

Finally, when biscotti are cool, drizzle with melted white chocolate.

White Chocolate Cranberry Pistachio Bark

Homemade treats really don’t get any easier than this. It is a great treat to pack up for gifts for the holidays because they are easy to make and always a hit.  You can also use milk chocolate if desired.

Ingredients

  • 1-1/2 bags white chocolate chips
  • 1 Cup pistachios, roasted unsalted
  • 1 Cup cranberries, dried

Directions

First, line a baking sheet with parchment paper and set aside.

Then, pour the white chocolate chips into a microwavable bowl. Microwave for 60 seconds. Stir. Heat again for 30 seconds and stir again. Repeat until chips are completely melted.

Next, spread melted chocolate evenly over parchment. Sprinkle evenly with pistachios and cranberries.

Finally, place in the fridge for at least 4 hours.
